• Let’s Picnic!

Now that spring is officially here Hubby and I have started getting out of the house and going on hikes. When there are hikes involved, picnics can’t be far behind. One of the parks we like to spend time in is about 10 miles from our house, Chickasaw State Park. Beautiful spring flowers are springing up everywhere! The woods are full of dogwood and redbud trees in bloom. There is a sea of green breaking out in all the trees (and waves of pollen are following…) The state has drained most of the water out of the lake so that they can rebuild the bridge across it. All of us…

  • Spaghetti Squash

In learning a new way of eating, I have had to learn about new foods. Case in point: The Spaghetti Squash. I had never heard of it… or if I had heard the name I had no idea what it was. Buying one was daunting. As you can see in my picture I wanted one that would fit in my Instant Pot. (I use my Instant Pot for much faster prepping times for things like this the most.) 1 Whole spaghetti squash no longer than 8″ long at room temperature, punctured with a knife a few times and add 1 cup of water to your pot and set it on…

  • How to Eat at a Restaurant While on the 21 Day Fix!

When I started this blogging journey I wanted to have more than one subject to “talk” about. I adore my family and I love to cook but my life is bigger than just those things. We like getting out of the house and going out to eat is one of those “things” we do. I have recently lost 55 lbs by learning how to eat right. I knew in theory what was good vs bad foods, but had no clue how to do things like read a food label or a restaurant menu. The 21 Day Fix has taught me a myriad of things, especially portion control. But after mastering “how…

  • Shiloh National Park and The Outpost at Pickwick

I just had a birthday. Not a milestone one but one where I am proud to say “I am healthier at age 58 than I was at age 50!” A loss of 55 lbs in the past year has given me pause to reflect on how far I have come….. this is a picture I have captioned,   FOUR BIRTHDAYS Hubby and I went a couple of counties over to the Tennessee River area. To Shiloh National Military Park https://www.nps.gov/shil/index.htm where they were having a re-enactment of the Civil War battle. We have visited the park often over the years but we had never gone on the anniversary date of the battle.…

  • Easter Glow Party

This has been a wet spring so far and Easter weekend wasn’t any different! It was an early Easter and so that almost always means cold too. Sure enough, we had to hunt eggs with our coats on. I usually have some kind of an egg hunt for my Grandarlings but some of them are getting bigger and so it is getting harder to plan a party that a 14-year-old boy and his 10-year old sister AND their 3-year old cousin can enjoy together. My dilemma was what kind of a party will appeal to all of them and a few of their cousins?? A nighttime GLOW HUNT seemed like the…
