Chicken Cordon Bleu {Portion Fix/21 Day Fix}

Chicken Cordon Bleu has a fancy French name but is so simple to make!! The fancy name simply means “Blue Ribbon” Chicken. Once you try it you will agree with its blue-ribbon status!

What are the ingredients for Chicken Cordon Bleu?

This is a stuffed/rolled chicken breast. So you want to start with a chicken breast that will fill 1 Red container. I am able to get huge ones that are 2R for 1 breats!

I shove it in tight and then cut it off even.

Then butterfly it open and pound it out to 1/2 inch thickness.

Then you start the rest of the layers. A ham slice almost as big as the chicken breast. I use the Never Any Brand from Aldi’s, it comes in a thick-sliced version. I count 1 slice as 1/2 Red container.

If you don’t have an Aldi’s near you can use 21 Day Fix approved deli ham. That will be 3 thinner slices and will count as 1/2 Red container too. 

The cheese used for Chicken Cordon Bleu is Swiss. I never buy slices or pre-shredded if I need the cheese to melt and turn to goo. They have an anti-stick compound on them that keeps them from melting. So I buy a block of cheese and use a cheese grater. For these 2 breasts, I am going to split 1 blue container between them. You could slice it thin if you wanted but I find grating it makes it easier to roll. Because that is the next step… roll.

I start at the most narrow end of my chicken and TIGHTLY roll them up. Tucking the cheese as deep in the roll as possible. Lay them “seam side down” in an olive oil sprayed pan. Then I spray the tops with olive oil and sprinkle with seasoned bread crumbs. I secured these with toothpicks to help keep them tucked.

Because the cheese gets gooey it will melt out of the chicken a little bit. Make sure to serve yourself that cheesy goodness!!

Ingredients
  

  • 2 medium chicken breasts, butterflied, pounded to 1/2" thick
  • 2 medium thick sliced nitrite/nitrate-free ham, or 3 thin slices
  • ⅓ cup swiss cheese, shredded- divided in half
  • olive oil spray
  • 2-4 tablespoons seasoned whole wheat bread crumbs

Instructions
 

  • Preheat oven to 350°.
  • Layer chicken with ham and cheese.
  • Roll chicken bundles tightly. Tucking the cheese in the edges as needed.
  • Lay in olive oil sprayed pan. Spray the top of the chicken bundles with olive oils spray and pat bread crumbs on to stick. Secure chicken with toothpicks if needed.
  • Bake for 25-30 minutes.
