Because of falling temperatures, I have been thinking about a chicken recipe that I was trying to perfect last fall. I never did get it just right. That is why I am excited about this stuffed Apple Walnut Brie Chicken today. It tastes fancy but is so easy! The honey butter drizzled over it will give you just enough sweetness to go with the savory!
What ingredients go into Apple Walnut Brie Chicken?
First of all, chicken breast. I eyeball measure it with my container as a guide. This size is about 1 1/2 Red containers per serving. I am making 2 servings today.
I tried just butterflying my chicken breast the last time I made this recipe but I didn’t like the results. So this time I decided to butterfly it and then pound it out a little to make the 2 halves match a little so they will cook in the same amount of time.
Next, the stuffing ingredients. A granny smith apple has plenty of tart flavor. Walnut halves that we are going to chop. And a wedge of your favorite brand of brie cheese.
Last but not least, a honey butter mixture to drizzle over the entire breast when it is plated. Just the right amount of sweetness to go with that tart apple!
Let’s assemble this chicken!
Layer 1/2 Blue container of brie cheese. I try to keep it back from the edges to keep it from oozing out in the oven.
The 1st couple of times I tried this recipe I sliced the apples to stuff in the chicken. But, I didn’t get the apple as done as I wanted it to be. So this time I decided to grate them up and pile them on. Don’t grate them until it is time to use them because they will turn brown quickly.
The next layer of flavor comes from walnuts. I had tried them in a sauce before and just didn’t like that, so this time I stuffed them in with the apples and cheese. Perfect! Just the flavor I was looking for.
Walnuts count as a blue container just like the cheese does. I used 1/2 Blue container of brie already so used 1/2 Blue container of chopped walnuts for the other half.
Walnuts are “counted” on our food list. By “counted” I mean that you do not use your Blue container to measure them, you count 8 walnut halves as 1 whole Blue container. I have more information about all of the nuts on our food list HERE.
Salt and pepper a little on the inside and when you fold it over. I mash and squish the stuffing away from the edges. Then lay it in an olive oil sprayed pan and spray the top side of the chicken. Salt and pepper the top side of the chicken too. You can secure the edges of the chicken with tooth pics if there is too much of a gap between the chicken edges. If cheese does ooze out I just scoop it onto my plate anyway!
Top with a finishing sauce
I make a honey butter finishing sauce to drizzle over the chicken when it is done. This is totally optional and you would need to count how many oil teaspoons and sweet teaspoons you use. I use 2 teaspoons of melted butter and 2 teaspoons of honey mixed.
I like the way the honey tastes with the apple I use maple syrup sometimes instead. When I use maple syrup and want a super maple flavor to stand out I add a couple of drops of maple extract to the mix. The maple version makes for a very fall-like dish indeed!
Apple Walnut Brie Chicken {21 Day Fix}
Ingredients
- 2 medium chicken breast, 1-2 Red containers each
- ½ medium granny smith apple, grated and divided in half- only grate when ready to use to avoid it turning brown
- 8 halves walnuts, divided in half and chopped
- ⅓ cup brie cheese, divided in half
- olive oil spray
- 4 teaspoons butter, melted
- 4 teaspoons honey or maple syrup
- salt and pepper to taste- salt the inside of the chicken breasts before you fill them
Instructions
- Preheat oven to 350° and spray baking pan.
- Butterfly the chicken breasts open. Lay plastic wrap over them and with a mallet pound out till both sides are about the same thickness.
- Add a layer of cheese, a layer of grated apple, and a layer of chopped walnuts to half of each breast.
- Fold chicken over fillings, making sure to tuck them in tight and secure with toothpicks if you want to. Spray the top of the chicken with olive oil spray.
- Bake for 20-25 minute or till chicken is lightly golden and a fork prick shows clear juices.
- While chicken is baking stir together the finishing sauce. Spoon sauce ½ sauce over each piece of hot chicken and enjoy!

I love a nice fresh salad beside dishes like this but I may do an apple-themed supper and include them in other dishes!

This was delicious!! I used regular sized chicken breast and sliced them before I drizzled the sauce over them. Next time I would slice the apples as the shredded apples were a bit mushy for my taste. I did end up cooking mine about 40-45 mins. II will definitely be making these again as they were easy to assemble. The sauce makes it!!!
