This Cabbage and Sausage Sheet Pan Meal is one of those meals that is so easy that I don’t have to think about very much! A quick prep of the ingredients thrown on a cookie sheet covered in foil (to make the clean-up easier) and popped in the oven is all there is to it. It just doesn’t get much easier than that…
What ingredients go onto this sheet pan?
I have cabbage in my fridge most of the time because it is so cheap and so versatile. I use 1/2 a medium head sliced in 1-inch slices. Depending on how much it cooks down this can equal 1-2 Green containers for 1 serving.
When I shop for chicken sausages I always buy enough to throw some packs in the freezer. Today I am using Aldi’s Never Any brand of chicken sausage, the tomato basil flavored one. You can use any approved sausage that you like of course. I have some information about approved sausages HERE. Because my sausage is heavy on the sodium side, I limit my serving to 1 link.
I mix my oil and spices in a small bowl. Then dig out my silicon brush to apply it with. Sometimes I add onion but sometimes I am not in the mood for it.
How to assemble the Cabbage and Sausage Sheet Pan Meal
On a foil-covered pan lay the cabbage slices in a single layer. Brush olive oil, salt, pepper, and Mrs. Dash Onion and Herb blend over the slices. Here again, you can customize that flavor. Mrs. Dash makes a ton of flavor but some simple salt and pepper will also work.
I use 2 teaspoons of olive oil per serving, so 4 teaspoons for this small pan full.
Next, I layer on the sausage. Again, I am dividing this pan into 2 servings so I just put one sliced sausage over each row of cabbage. The flavor of the sausage will soak into the cabbage.
Most of the time I like a layer of onion rings over the whole thing but it is optional. I have also put pepper rings with the rest of it all. If you use the onion and/or peppers give them a light spray of olive oil spray.
I like my cabbage “tender-crisp” so I don’t flip it usually during the 25 minutes of cooking time. But if I wanted it to be more tender I will flip it around on the pan and cook it another 10-15 minutes.
Cabbage and Sausage Sheet Pan Meal {Portion Fix/21 Day Fix}
Ingredients
- olive oil spray
- ½ head cabbage, sliced into about 1-inch slices
- 4 teaspoon light tasting olive oil
- 1 teaspoon Mrs. Dash Onion and Herb Blend
- salt and pepper to taste
- 2 links chicken sausage, sliced
- ½ medium onion, sliced (optional)
Instructions
- Preheat oven to 350°.
- Spray a foil-lined baking sheet with olive oil spray.
- Mix olive oil, Mrs. Dash, salt, and pepper in a small bowl.
- Line up cabbage slices on the foil and brush with olive oil mixture.
- Placed sliced sausage and onion over the cabbage. Spray lightly with olive oil spray.
- Bake for 25 minutes (or more to taste). Turn everything over carefully if it starts to brown too much.

Notes
- Depending on the size of your air fryer, you may have to cook this in 2 batches.
- Preheat the air fryer.
- Layer ingredients in the basket and cook for 15 minutes.
- Check for doneness and adjust your cooking time accordingly.
