One of my favorite make-ahead casseroles is a Cheesy Hash Brown Casserole! I can serve it with breakfast, lunch, or dinner/supper. (If someone in the South asks you over for “diner” ask “what time?”… trust me.)
What ingredients do you need for this Cheesy Hash Brown Casserole?
This is a classic casserole with a healthier twist! No “cream of” anything soup is used and makes it healthier! The rest of the ingredients are simple ones I keep on hand at all times
- chicken broth, low sodium
- cornstarch
- cheddar cheese, shredded
- butter
- garlic powder
- onion powder
- salt and cracked black pepper
- fresh chives or green onions, optional
The most important ingredient…
- frozen hash browns — Best Choice, Aldi’s Brand Potatoes O’Brien, OR Alexia Hash Brown Classic
I picked up a random bag of hashbrowns in the frozen section one day when my hubby was picking out his store-bought fries. Hash brown casserole was always a holiday favorite with my family. I couldn’t believe my eyes there were ONLY 3 ingredients!
So I started to really search hard thru frozen potato product brands to find ones that were also free of dextrose. I came across 3 brands I could buy in my area.
The store/generic brand Best Choice has only 3 ingredients: potatoes, onions, and red/green peppers. I am using this brand today for my Cheesy Hash Brown Casserole.
Aldi’s brand of the Potatoes O’Brien is very clean too!! The only ingredients again are potatoes, onions, and red/green peppers.
The 3rd brand that I can find local is the healthy Alexia brand. I can find these at Sprouts Health Food Store. It has a few spices added in but no extra junk! If you do use this brand adjust the seasonings in the recipe to reflect the spices added to these.
It is easy to put this casserole together!
Spray a 2 qt. casserole dish with olive oil spray. You can start with frozen hashbrowns or thawed ones it will not matter in the end product, just the cooking time.
Make the gravy 1st and then it is just a matter of dumping everything into the casserole dish!
Cook them for about 45-60 minutes, depending on how “cold” your casserole is. If it came out of the fridge overnight it is going to need the whole 60 minutes. But if your potatoes are thawed and your gravy is warm you will only need to cook for about 45 mins.
Cheesy Hash Brown Casserole {Portion Fix/21 Day Fix}
Ingredients
- ¾ cup chicken broth
- ¼ cup almond milk (any milk)
- 1 Tablespoon corn starch mixed with 2 Tablespoons cold water
- 3 cups frozen hash browns/potatoes O'Brien
- 1 Tablespoon gluten-free 1-for-1 or whole wheat flour
- 1 Tablespoon butter
- 1 cup cheddar cheese, shredded
- olive oil spray
- ¼ teaspoon salt and pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Preheat oven to 350°.
- Add chicken broth and milk into a small pan. Heat till boiling. Mix in corn starch slurry and boil for 60 seconds.
- Mix potatoes, cheese, spices, and flour very well. Add corn starch gravy to the potato mixture and stir very well.
- Add the entire mixture into an olive oil sprayed casserole dish.
- Bake for 45-60 minutes or till hot and bubbly. Let the casserole stand for 5-10 minutes before serving.

What do I serve with this Cheesy Hash Brown Casserole?
This is a great cheesy potato side dish for a simple p0rtien like air fryer chicken tenders.
I love to make this for the holidays too. My Christmas Eve Brunch table ALWAYS has some version of it on there. I like a mixture of sweet and savory dishes for that brunch so I might make some little French Toast Cups. Recipe HERE.
