Greek flavors are some of my favorite flavor profiles. Lemon-y, brine-y, tart, and cheesy flavors are all delicious. So I decided it was time to make a “sheet pan-style” Greek dish. Greek Chicken Tenders we created!!
Assemble the ingredients for Greek Chicken Tenders
It all starts with the chicken. I chose chicken tenders for this because it is what I had on hand. Thanks to a great sale I got them for .99 an lb. This recipe is going to make 2 servings so I used 4 of them. I measured them in my Red container and 2 tenders fit perfectly. I know from now on how many to count without putting them in my container. You could use any chicken breast you want or even use thighs if you like dark meat. Lay them in an olive oil sprayed pan.
One Blue container shoved FULL of feta cheese comes next. You can get 2 Blue containers out of a package this size. I only use 1 container of cheese for 2 servings so it is only 1/2 Blue container per serving. I scatter the cheese along with 1/2 a lemon cut into thin 1/4 slices. Save that other half of that lemon for later.
Prepping the next ingredients
Red onion and olives are up next. A half-cup of red onion was plenty for the 2 servings of Greek Chicken Tenders. Olives are counted as an Orange container on the 21 Day Fix. They are ‘counted” on our list, Olives, 10 medium. I only had small black olives and small green olives on hand so I used 15 of each to equal the same amount as 10 medium. I have made this with all kinds of olives, basically whatever was on hand. So you could use any combination of your favorite ones.
Again them across the chicken trying to keep it all piled high! Mix 2 teaspoons olive oil and the juice from the lemon half with salt, pepper, and garlic powder and drizzle it over the chicken.
It is ready for the oven now! Chicken tenders do not take that long to cook, only about 20 minutes. But if you use a different cut of chicken it might take a little longer. You could also layer this all into an air fryer basket and cook it in there too. I have done it in my NuWave Oven for about the same 20 minutes.
Greek Chicken Tenders {21 Day Fix}
Ingredients
- olive oil spray
- 4 chicken tenders
- 1/2 lemon quartered and sliced thin- save the other half for juice
- ⅓ cup crumbled feta cheese
- 20 medium olives of your choice -- or 30 small olives
- ½ red onion, sliced
- 2 teaspoons olive oil
- juice from ½ lemon
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon garlic powder
Instructions
- Preheat oven to 350°.
- Add chicken to olive oil sprayed pan.
- Layer the lemon, cheese, onion, and olives on top of the chicken.
- Mix olive oil, lemon juice, salt, pepper, and garlic powder and drizzle over the chicken and layers.
- Bake for 20 minutes or until the chicken is done.

Ideas for serving Greek Chicken Tenders
Just split the servings apart. Most of the time I just eat 1/4 of the recipe or 1 tender and the stuff stacked on it. It is great topping a huge salad with some extra oil teaspoons and some vinegar added as dressing since it uses olives as an Orange container. And I love it stuffed into a baked potato too!
