Mississippi Comeback Shrimp Salad!! This chopped shrimp salad is in a tasty sauce! Served it over a bed of greens or in a toasted bun for a traditional shrimp roll sandwich. One of my favorite ways is to put it in a pita pocket.
Why is it called Mississippi Comeback Shrimp Salad?
In Central Mississippi, many restaurants feature a french fry/ sandwich sauce on their menus. It is a simple mayo-based sauce flavored with pantry staples! It gets its name from its ability to make you “comeback” for more!
My motto “Sauce = Life” really shines thru with this recipe for sure. I take all the elements of a shrimp/crab/lobster roll filling and toss it with this wonderful sauce!
Gather some mayo, pickle juice, ketchup, dijon mustard, lemon juice, hot sauce, and a couple of spices, and make the sauce ahead of time. I like my sauces to sit for a while and let the flavors “marry” together, for their fullest flavor.
What other ingredients go into this shrimp salad?
Well, the shrimp of course!! Store-bought pre-cooked shrimp is perfect to use for this shrimp salad. Thaw it out and squeeze out all of the moisture. I might even use leftover boiled or grilled shrimp. If you are starting with raw just steam them and cool them off in ice, this is a cold salad so you don’t want to start with hot shrimp.
Whatever size you buy will be fine because you are going to just chop them up anyway.
I like the classic shrimp roll veggie ingredients of onions and celery for this salad. You could add any combination of veggies that you want that would equal 1 cup of diced veggies. Make sure to chop the shrimp and the veggies about the same size to make the salad easier to eat.
