Ingredients Method

Ingredients
  

  • pounds lean ground beef or 4R
  • tablespoon garlic, minced
  • 30 green olives, sliced
  • 3 tablespoons onion, minced
  • ¼ teaspoon each salt and pepper
  • 4 slices provolone cheese
  • 4 teaspoons pesto
  • 1 small tomato, sliced thin
  • 1 teaspoon capers
  • 1 tablespoon grated parmesan cheese, the powdery kind

Method
 

  1. Preheat oven to 350°
  2. Mix beef, garlic, olives, onion, and salt and pepper with a fork.
  3. Form a loaf and add to an olive oil sprayed baking dish.
  4. Spread 2 teaspoons of pesto over the top of the loaf and then top with 4 slices of cheese.
  5. Spead 2 more teaspoons of pesto over the cheese. Add sliced tomatoes, parmesan cheese, and capers.
  6. Bake for 25-30 minutes at 350°.
