- 1½ pounds lean ground beef or 4R
- 1½ tablespoon garlic, minced
- 30 green olives, sliced
- 3 tablespoons onion, minced
- ¼ teaspoon each salt and pepper
- 4 slices provolone cheese
- 4 teaspoons pesto
- 1 small tomato, sliced thin
- 1 teaspoon capers
- 1 tablespoon grated parmesan cheese, the powdery kind
Preheat oven to 350°
Mix beef, garlic, olives, onion, and salt and pepper with a fork.
Form a loaf and add to an olive oil sprayed baking dish.
Spread 2 teaspoons of pesto over the top of the loaf and then top with 4 slices of cheese.
Spead 2 more teaspoons of pesto over the cheese. Add sliced tomatoes, parmesan cheese, and capers.
Bake for 25-30 minutes at 350°.
