White Chicken Chili {21 Day Fix}
White Chicken Chili is a flavorful "one-pot" meal the whole family will enjoy.

- 6 chicken tenders, chopped
- 1 box low-sodium chicken broth or 2 cans
- 2 cans low-sodium Great Northern beans, rinsed ** mash 1/2 cup of mash beans before adding
- 1 cup onion, or onion and bell pepper, chopped
- 1 7 oz can or 1 cup salsa verde
- 1 4 oz can chopped green chilies
- 2 teaspoons cumin
- 2 teaspoons garlic powder
- 1 teaspoons onion powder
- salt and pepper to taste
- ⅓ cup canned coconut milk, optional
Add everything except the coconut milk, salt, and pepper to a large pan. Simmer for 30-40 minutes or till onions are clear. Add coconut milk if using. Taste, adjust salt and pepper.

** I have often dumped all the ingredients, except the coconut milk, into my crockpot and cook it for 4 hours on low or 2 on high. Again I go by the onions being done.
**Instant pot- Add broth, chicken, onions, and spices in Instant Post and pressure for 5 minutes. Fast release and add beans then pressure for 5 more minutes. Fast release and add coconut milk and salt and pepper as needed.
