- Add everything except the coconut milk, salt, and pepper to a large pan. Simmer for 30-40 minutes or till onions are clear. Add coconut milk if using. Taste, adjust salt and pepper.

Notes
** I have often dumped all the ingredients, except the coconut milk, into my crockpot and cook it for 4 hours on low or 2 on high. Again I go by the onions being done.
**Instant pot- Add broth, chicken, onions, and spices in Instant Post and pressure for 5 minutes. Fast release and add beans then pressure for 5 more minutes. Fast release and add coconut milk and salt and pepper as needed.
