Ingredients
  

  • ¾ cup chicken broth
  • ¼ cup almond milk (any milk)
  • 1 Tablespoon corn starch mixed with 2 Tablespoons cold water
  • 3 cups frozen hash browns/potatoes O'Brien
  • 1 Tablespoon gluten-free 1-for-1 or whole wheat flour
  • 1 Tablespoon butter
  • 1 cup cheddar cheese, shredded
  • olive oil spray
  • ¼ teaspoon salt and pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Method
 

  1. Preheat oven to 350°.
  2. Add chicken broth and milk into a small pan. Heat till boiling. Mix in corn starch slurry and boil for 60 seconds.
  3. Mix potatoes, cheese, spices, and flour very well. Add corn starch gravy to the potato mixture and stir very well.
  4. Add the entire mixture into an olive oil sprayed casserole dish.
  5. Bake for 45-60 minutes or till hot and bubbly. Let the casserole stand for 5-10 minutes before serving.
