Eggs in Purgatory {Portion Fix/21 Day Fix}

Eggs in Purgatory are eggs cooked in a thick tomato sauce. It only requires a handful of pantry ingredients and you can adjust the heat.

Ingredients
  

  • olive oil spray
  • ½ cup onions, diced
  • 1 cup canned tomatoes and juice
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 1-2 large eggs
  • tablespoons mozzarella cheese, shredded
  • optional crushed red pepper flakes or Extra Spicy Mrs. Dash

Instructions
 

  • Spray pan with olive oil spray. Sautee onions till translucent.
  • Add tomatoes and spices. Simmer till thickened.
  • Make a hole in the sauce and crack an egg into it. Repeat if using 2 eggs.
  • Cook for up to 5 minutes or until the egg is done to your taste. Cooking method 1: Continue to simmer and put a lid on the pan. 2: Put the pan under the broiler.
  • When egg is almost done add mozzarella cheese and return the lid or under the broiler till melted.
  • Garnish with basil and red pepper flakes/ Extra Spicy Mrs. Dash to taste.

    Notes

    **Air Fryer Instructions" Follow the recipe in an air fryer safe pan until the step for cooking the egg. Place pan with egg in air fryer and cook until egg is done to your liking. Add cheese and cook a few more minutes till cheese is melty. Garnish and serve.
