This stuffed Apple Walnut Brie Chicken tastes fancy but is so easy! A honey butter drizzle over it will give you just enough sweetness to go with the savory.

Ingredients Method

Ingredients
  

  • 2 medium chicken breast, 1-2 Red containers each
  • ½ medium granny smith apple, grated and divided in half- only grate when ready to use to avoid it turning brown
  • 8 halves walnuts, divided in half and chopped
  • cup brie cheese, divided in half
  • olive oil spray
  • 4 teaspoons butter, melted
  • 4 teaspoons honey or maple syrup
  • salt and pepper to taste- salt the inside of the chicken breasts before you fill them

Method
 

  1. Preheat oven to 350° and spray baking pan.
  2. Butterfly the chicken breasts open. Lay plastic wrap over them and with a mallet pound out till both sides are about the same thickness.
  3. Add a layer of cheese, a layer of grated apple, and a layer of chopped walnuts to half of each breast.
  4. Fold chicken over fillings, making sure to tuck them in tight and secure with toothpicks if you want to. Spray the top of the chicken with olive oil spray.
  5. Bake for 20-25 minute or till chicken is lightly golden and a fork prick shows clear juices.
  6. While chicken is baking stir together the finishing sauce. Spoon sauce ½ sauce over each piece of hot chicken and enjoy!
