Copycat Ruth's Chris Chopped Salad {Portion Fix}

A chopped salad of simple ingredients drenched in a tart and creamy lemon basil dressing.

Ingredients
  

SALAD
  • 3 cups iceberg lettuce, julienned
  • 1 cup spring mix greens, chopped small
  • ¼ cup red onion, chopped small
  • 1 cup mushrooms, chopped small
  • 25 green olives, sliced
  • ½ cup hearts of palms, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 2 large boiled eggs, chopped fine
  • cup blue cheese crumbles
Lemon-Basil Dressing
  • 2 tablespoons mayonnaise
  • 2 tablespoons greek yogurt
  • 1 tablespoon fresh basil, minced
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon cracked black pepper
Garnishes
  • 20 cherry tomatoes, halved
  • 1 cup small whole wheat croutons, (or 2 Yellow containers worth)
  • 1 cup crispy onion strings

Method
 

SALAD
  1. Mix all the salad ingredients in a bowl very thoroughly.
  2. Add the Lemon-Basil Dressing and again mix very well.
  3. Form 2 cups of mixed salad into a tower. (Push into a plastic cup for a mold.)
Garnish
  1. Add 10 tomato halves around each serving.
  2. Add ¼ cup crispy onions to each serving.
  3. Add ¼ of the croutons to each serving.
