Copycat Alice Springs Chicken {21 Day Fix}

A chicken breast smothered in bacon, honey mustard, and cheese that is stacked on top of a bed of mushrooms is a perfect weeknight meal!

Honey Mustard Sauce

  • 4 Tablespoons mayonnaise
  • 3 Tablespoons Dijon mustard
  • 1 Tablespoon honey


  • olive oil spray
  • 4 cups sliced mushrooms
  • 4 medium chicken breasts
  • salt and pepper
  • 4 slices turkey bacon, cooked and crumbled
  • cup cheese of your choice, shredded


Honey Mustard Sauce

  • Mix all ingredients well. Set aside.


  • Preheat oven to 350°
  • Spray a casserole dish with olive oil spray
  • Add mushrooms to the dish. Add chicken on top of the mushrooms. Put crumbled bacon on top of the chicken. Evenly pour all the honey mustard sauce over the bacon. Lastly, add shredded cheese on top of everything.
  • Bake at 350° for 30 minutes.
