  • 1 cup cooked brown rice, with herbs added, * see above
  • 2 medium cooked chicken breast, *see above
  • 1 cup pico de gallo, * see this recipe in the link above
  • 4 tablespoons creamy avocado dressing * see recipe below

Creamy Avocado Dressing

  • 1 single serve Wholly guacamole or 3 tablespoons homemade guacamole
  • 2 tablespoons coconut cream
  • 1 tablespoon mayonnaise
  • ½ teaspoons garlic, minced
  • splash lemon lime juice (optional)
  • splash almond milk, Thin to desired consistency.


  • Layer bowl in this order: ½ cup rice, 1 medium honey lime chicken breast cubed, ½ cup pico de gallo, 2 tablespoons creamy avocado dressing.

Creamy Avocado Dressing

  • Mix the 1st four ingredients and stir well. Add the lemon/lime juice and/or almond milk as needed.
