- 1½ pounds lean ground beef or 4 red containers
- ¼ cup onion, diced
- 1 tablespoon garlic, minced
- 1 tablespoon cilantro or parsley, minced
- 10 black olives, sliced
- 1 tablespoon pickled jalapenos, chopped
- 1 teaspoon salt and ¼ teaspoon pepper
- 3 tablespoons cheddar cheese, shredded, PLUS
- ⅓ cup cheddar cheese, shredded
- pickled jalapeno slices, to taste
- 1 small tomato, sliced
- 1 tablespoon grated parmesan cheese, (the powdery kind)
Preheat oven to 350°
Mix the 1st 9 ingredients lightly with a fork,
Form into a loaf and place in an olive oil sprayed pan.
Spread the shredded cheese across the top.
Add tomato slices and then top them with the parmesan cheese. Add jalapeno slices to taste to the top.
Bake for 30-40 minutes at 350°.
