Ingredients
  

  • pounds lean ground beef or 4 red containers
  • ¼ cup onion, diced
  • 1 tablespoon garlic, minced
  • 1 tablespoon cilantro or parsley, minced
  • 10 black olives, sliced
  • 1 tablespoon pickled jalapenos, chopped
  • 1 teaspoon salt and ¼ teaspoon pepper
  • 3 tablespoons cheddar cheese, shredded, PLUS
  • cup cheddar cheese, shredded
  • pickled jalapeno slices, to taste
  • 1 small tomato, sliced
  • 1 tablespoon grated parmesan cheese, (the powdery kind)

Instructions
 

  • Preheat oven to 350°
  • Mix the 1st 9 ingredients lightly with a fork,
  • Form into a loaf and place in an olive oil sprayed pan.
  • Spread the shredded cheese across the top.
  • Add tomato slices and then top them with the parmesan cheese. Add jalapeno slices to taste to the top.
  • Bake for 30-40 minutes at 350°.
