Cheesy Hash Brown Casserole with a healthier twist! No "cream of" anything makes is healthier! Using FROZEN hash browns makes it EASY too!

Ingredients
  

  • ¾ cup chicken broth
  • ¼ cup almond milk (any milk)
  • 1 Tablespoon corn starch mixed with 2 Tablespoons cold water
  • 3 cups frozen hash browns/potatoes O'Brien
  • 1 Tablespoon gluten-free 1-for-1 or whole wheat flour
  • 1 Tablespoon butter
  • 1 cup cheddar cheese, shredded
  • olive oil spray
  • ¼ teaspoon salt and pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions
 

  • Preheat oven to 350°.
  • Add chicken broth and milk into a small pan. Heat till boiling. Mix in corn starch slurry and boil for 60 seconds.
  • Mix potatoes, cheese, spices, and flour very well. Add corn starch gravy to the potato mixture and stir very well.
  • Add the entire mixture into an olive oil sprayed casserole dish.
  • Bake for 45-60 minutes or till hot and bubbly. Let the casserole stand for 5-10 minutes before serving.

Notes
