- 1 pound lean ground beef
- ½ cup onion, minced
- 2 cloves garlic, minced
- 1 cup diced tomatoes, fresh or canned
- ¼ cup tomato sauce or juice from canned tomatoes
- ¼ cup green olives, sliced
- 2 tablespoons olive brine
- 2 tablespoons water
- 1½ teaspoon cumin
- 1 teaspoon chili powder
- salt and pepper, to taste
- 4 ½ cup servings cooked brown rice
Sriacha Mayo
- 1 tablespoon mayonnaise or veganaise
- 1 tablespoon sriracha
Brown meat, scrambling till done and drain all the grease away. Add onion and garlic and sautee an extra minute or two.
Add all the rest of the ingredients except the salt and cook down till all the liquid is gone. Taste for salt and adjust.
Serve 3/4 cup meat mixture over 1/2 cup brown rice. Top with 1 tablespoon of sauce.
