Copycat Ruth's Chris Chopped Salad {Portion Fix}
A chopped salad of simple ingredients drenched in a tart and creamy lemon basil dressing.

SALAD
- 3 cups iceberg lettuce, julienned
- 1 cup spring mix greens, chopped small
- ¼ cup red onion, chopped small
- 1 cup mushrooms, chopped small
- 25 green olives, sliced
- ½ cup hearts of palms, chopped
- 4 slices turkey bacon, cooked and crumbled
- 2 large boiled eggs, chopped fine
- ⅔ cup blue cheese crumbles
Lemon-Basil Dressing
- 2 tablespoons mayonnaise
- 2 tablespoons greek yogurt
- 1 tablespoon fresh basil, minced
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon cracked black pepper
Garnishes
- 20 cherry tomatoes, halved
- 1 cup small whole wheat croutons, (or 2 Yellow containers worth)
- 1 cup crispy onion strings
SALAD
Mix all the salad ingredients in a bowl very thoroughly.
Add the Lemon-Basil Dressing and again mix very well.
Form 2 cups of mixed salad into a tower. (Push into a plastic cup for a mold.)
Garnish
Add 10 tomato halves around each serving.
Add ¼ cup crispy onions to each serving.
Add ¼ of the croutons to each serving.
