Greek Pasta Salad in a Jar {21 Day Fix}

Fun little jars filled with layers of Greek flavors! Perfect for meal prepping or picnics.

Ingredients
  

Greek Salad Dressing
  • ½ cup mayonnaise
  • ¼ cup extra light tasting olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cracked black pepper
  • 1/2 teaspoon Greek seasoning ***see note
  • 1 teaspoon garlic powder
Ingredients for 1 jar { multiply by as many servings as you want to make}
  • 5 teaspoons dressing
  • cups veggies, a mix of tomatoes, cucumbers and peppers
  • ½ cup cooked pasta, penne or other chunky pasta
  • 1 tablespoon olive relish ****1 slice of lemon diced up and a little lemon zest to 1 teaspoon minced onions and 2 olives minced.
  • tablespoons crumbled feta cheese

Equipment

  • Jar with lid.

Method
 

Greek Salad Dressing
  1. Put all the ingredients in a jar. Put a lid on and give it a LONG shake.
Layering the jars
  1. Add dressing to the jar 1st
  2. Start veggie layer with tomatoes, then cucumbers and peppers.
  3. Add pasta on top of the veggies and place 1 tablespoon olive relish on the pasta.
  4. End with crumbled feta cheese on top. Put a tight lid on and store upright in the fridge.

*** This is the Greek seasoning I use, it is the salt-free version.
