I like eggs I just don’t like them for breakfast. Long story…. but I eat my eggs at night. So I have been finding other ways to enjoy eggs as a savory main dish. One of my favorite ways to eat them is in an egg salad. This Healthy Egg Salad is perfect for a sandwich. Although, I often eat it in lettuce leaves to help get those veggies into my day too.
What makes this egg salad healthy?
Most egg salad recipes are laden with mayonnaise and that is how I have eaten it most of my life. I changed all that when I started eating healthier.
With the help of my Mayo-Based Ranch Dressing, I am able to get that mayonnaise taste and feel that I crave with any of my “mixed salads”. I use it in my recent Healthy Ham Salad recipe too.
The rest of the ingredients
Another reason I love to make this recipe is that I ALWAYS have the ingredients on hand. Of course, eggs are the primary ingredient. Two large eggs equal one serving of protein with the 21 Day Fix. I usually make a batch using 4 eggs or 2 servings.
With the assumption that you have already boiled eggs ready for this recipe, you can proceed with the recipe. If you do NOT have eggs boiled already just follow your favorite way of doing them 1st. I like to make my egg salad with eggs cold from the fridge. Here is a great method of making boiled eggs in an Instant Pot.
I peel and cut all the eggs in 1/4ths and smash them with the tines of a fork. If I am doing a big batch I grate whole eggs on a box cheese grater. I don’t like my egg salad very chunky but you can control how fine you mash or grate your eggs.
Added to the ranch dressing I use mustard. I keep all kinds of mustard on hand and most of the time use regular yellow mustard. You might use a different amount of mustard for each “flavor” you choose.
Today I chose spicy brown mustard. A little salt and pepper are the only other ingredients I use. The mustard and salt and pepper are all to taste.

Ingredients
- 4 large boiled eggs, peeled and mashed
- 2 tablespoons Mayo-Based Ranch Dressing ** recipe in notes 2 Tablespoons = 1 Orange container
- 1 tablespoon spicy brown mustard
- salt and pepper to taste
Instructions
- Mash eggs and add ranch dressing, mustard, and a little salt and pepper.
- Mix well and taste to adjust salt and pepper.

How can you serve this Healthy Egg Salad?
One of my favorite ways to eat it is with toast. I love my little 2 section bowl full of salad and toast! I use Aldi brand bread and can use 3 slices for 1 yellow container. Information about bread HERE.
