I love Jalapeno Poppers! Having given up the unhealthy versions, I have had to find some healthy ways to get those flavors. Just without all the fat and calories. But I have come up with a new way to deliver those flavors with Jalapeno Popper Sloppy Joes!
Cheesy Sloppy Joes
I love a good tomato-based sloppy joe! This one from Confessions of a Fit Foodie is a really good one. Recipe HERE.
But I have developed a taste for cheesy, gooey, flavor-filled ones too! My recipe for Philly Cheese Steak Sloppy Joes has been a fan favorite for a while now. Recipe HERE.
I used Laughing Cow cheese wedges to get the creaminess in those. So for these Jalapeno Popper Sloppy Joes, I decided to use them again. This time I used the flavored ones. Spicey Pepper Jack sounded like it belonged in jalapeno sloppy joes!! The flavored ones count as 6 for 1B. All of the cheese pictured equals 4B.
I added some sharp cheddar and white cheddar to continue with the cheesiness!
The rest of the ingredients for Jalapeno Popper Sloppy Joes
I make these with ground beef, but you could use ground turkey or ground chicken too. Cooked, drained, and crumbled, then you add the cheese and turn it down low with a lid on it while you get the other ingredients ready.
All that cheese is going to make your mixture really stiff. We are going to add some liquid ingredients in order to make these “sloppy” joes. Ketchup, juice from jarred jalapenos, and a little milk are going to help them become creamy. Advice about condiments can be found HERE. How to count different milk products can be found HERE. Keep the stove on low because the cheese is going to want to stick.
I use pickled jalapenos slices instead of fresh ones in this recipe. The fresh ones have too much “bite” for me in this recipe. Chop the peppers kind of small so that they will distribute evenly thru the meat mixture. The amount of peppers you use is going to be up to you. I use any amount from tablespoons to 1/4 cup, depending on who is eating it. Adding some jalapeno juice to the mix is going punch up the heat too so take it easy adding the jalapenos till you know how hot the mix is without them.
My hubby doesn’t care for very spicy foods, so I usually separate his portion out after I add the jalapeno juice. Also, I go light on chopped peppers if I know I am going to microwave the leftovers. The microwave causes the peppers to release more oil into the mix and thus making it even HOTTER. I always drop a few jalapeno slices on the top of the bowl so that he will know what it is he is getting into!
Jalapeno Popper Sloppy Joes {Portion Fix}
Ingredients
- 1 ½ lbs ground beef, cooked, crumbled, drained 3 cups of any cooked ground meat will work
- 6 wedges Laughing Cow Spicy Pepper Jack wedges
- 1 cup cheddar cheese, shredded
- ¼ cup ketchup
- 2-4 Tablespoons milk of your choice
- 1 Tablespoon juice from jarred jalapenos
- chopped jarred jalapeno slices, to taste
- ¼ teaspoons black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Cook, scramble and drain ground beef.
- Add all the rest of the ingredients in the pan with the beef (only half the milk). Cover skillet and turn on low. Stir frequently till all the cheese is melted, use the extra milk if you need it to loosen up.

What to serve with these sloppy joes?
I use a toasted whole wheat hamburger bun to serve this on but I would sure stuff it into a baked potato too!!
