I love a good meatloaf. An old fashioned meatloaf or some fancy new way, it doesn’t matter to me! So while meal plan prepping one-day I decided it was time to try a couple of new fancy ways and so Meatloaf Two Ways got started.
Which Two Ways?
Jalapeno Cheddar and Provolone Pesto sounded like 2 great options!
I don’t believe in a bunch of fillers for every meatloaf. An old-fashioned breadcrumb or oatmeal and egg-based meatloaf have their place but I don’t care for that texture/flavor every time I eat meatloaf.
#1 Jalapeno-Cheddar Meatloaf
To 4 Red containers of 95%/5% ground beef, add onions, green pepper, olives, cilantro, minced garlic, pickled jalapenos, and cheddar cheese. If you don’t like any one of these ingredients you can leave them out. I like to mix it all with a fork so that I can fluff it as I go. Mashing it down too much makes it too dense for me.
I finish the top with more cheddar cheese (this day I used a little bit of Monterey jack cheese added to it.) A small tomato sliced then spread across it with a little parm dusted across the tomatoes keeps them from getting too “wet”. Then studded with more jalapeno slices according to your taste. After a whirl in the oven or air fryer, it is a beautiful melty mouthwatering meatloaf!!
#2 Provolone-Pesto Meatloaf
This one is bursting with bold flavors too. Heavy on the onion, olives, and garlic inside the meatloaf.
Again the rest of the flavor comes from the toppings. Slices of provolone cheese with a couple of teaspoons of your favorite pesto. I discuss sliced cheese and how to count it in this POST. Again a small tomato sliced across it all with that parmesan cheese dusted on them and then finished off with a few capers.
I love to blast the tops of them under the broiler for just a few minutes and get that “brown cheese” on the top!
Measuring ground beef
I am going to talk right here about the measuring of ground meat. Most recipes including Beachbody recipes count 1 lb of ground beef as 4 servings or 4 Reds for the 21 Day Fix. But in reality, it is more like 2 & 1/2 to 2 & 3/4 Red containers.
I want each of these meatloaves to actually be 4 full Red containers so I just measured them this way.
Meatloaf Two Ways {21 Day Fix} Jalapeno Cheddar MwTloaf
Ingredients
- 1½ pounds lean ground beef or 4 red containers
- ¼ cup onion, diced
- 1 tablespoon garlic, minced
- 1 tablespoon cilantro or parsley, minced
- 10 black olives, sliced
- 1 tablespoon pickled jalapenos, chopped
- 1 teaspoon salt and ¼ teaspoon pepper
- 3 tablespoons cheddar cheese, shredded, PLUS
- ⅓ cup cheddar cheese, shredded
- pickled jalapeno slices, to taste
- 1 small tomato, sliced
- 1 tablespoon grated parmesan cheese, (the powdery kind)
Instructions
- Preheat oven to 350°
- Mix the 1st 9 ingredients lightly with a fork,
- Form into a loaf and place in an olive oil sprayed pan.
- Spread the shredded cheese across the top.
- Add tomato slices and then top them with the parmesan cheese. Add jalapeno slices to taste to the top.
- Bake for 30-40 minutes at 350°.

Meatloaf Two Ways {21 Day Fix} Pesto Provolone Meatloaf
Ingredients
- 1½ pounds lean ground beef or 4R
- 1½ tablespoon garlic, minced
- 30 green olives, sliced
- 3 tablespoons onion, minced
- ¼ teaspoon each salt and pepper
- 4 slices provolone cheese
- 4 teaspoons pesto
- 1 small tomato, sliced thin
- 1 teaspoon capers
- 1 tablespoon grated parmesan cheese, the powdery kind
Instructions
- Preheat oven to 350°
- Mix beef, garlic, olives, onion, and salt and pepper with a fork.
- Form a loaf and add to an olive oil sprayed baking dish.
- Spread 2 teaspoons of pesto over the top of the loaf and then top with 4 slices of cheese.
- Spead 2 more teaspoons of pesto over the cheese. Add sliced tomatoes, parmesan cheese, and capers.
- Bake for 25-30 minutes at 350°.

- 1R, ½B, ½ Or, 1 oil teaspoon, ¼G( if you need to count it)
