Baked Caramelized Onions for French Onion Chicken {Portion Fix/21 Day Fix}

A pan full of Baked Caramelized Onions can be used in a number of ways! As toppers for sliders just perfect for game day.

All of these fantastic foods start with the same thing. Baked Caramelized Onions.

I dearly love caramelized onions in recipes but I hate taking the time to make them on top of the stove. I get distracted while trying to remember “stir” them often enough and before I know it I have burned them. So I needed to find a method where I didn’t have to stand over the stove.

What made me think “baked” caramelized onions?

I roasted a big chicken and noticed that I had a nice batch of cooked onions underneath my chicken when it was done.

I used them right then and there to make a batch of onion soup! So I added them to some broth and thickened it, then added some cheese!

I decided that I hadn’t bothered with the onions too much but the flavor was great. So I wanted to try a batch of JUST onions and see if I could get them to brown just a little.

I tried making them one day when I was “prepping” for my week. I had some white potatoes and sweet potatoes going in a 350-degree oven for an hour, so I prepped a pan full of onions too.

Three big yellow onions filled the bottom of my large castiron skillet. (Three 21 Day Fix Green Containers full)  Sprayed it lightly with olive oil. I tossed the onions with 2 teaspoons of olive oil before I added them to the pan.

I stirred them every 15 minutes.  You can see them beginning to brown…

I stirred them 3 times for a total of 1 hour of cooking and had the most wonderfully browned onions I had ever seen.

You can turn them into any recipe you want right here. I often tho put them away to use later in the week for my meal plan.

Important tips for making great Baked Caramelized Onions.

*******Right here I want to tell you that your oven, your pan, the thickness of your onions, etc.  can all mean that your onions might be done before or after mine was. For example, yours might be done at the 30-minute mark for thinly sliced onions cooked on a cookie sheet. When they are starting to get close to being done, don’t leave them in for the next whole 15 minutes. Sometimes mine are done at 50 minutes and not 60. I watch them closely when they are towards the end. *******

You can also use your air fryer for them. Use the same process, stir them every 10 minutes instead, because they will cook a little faster than a regular oven.

What recipe did I decide to make this day?

I made a baked chicken breast and smothered it in them. Then topped them with some shredded Swiss cheese and broiled them until it was all bubbly and browned!

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 recipe caramelized onions, from post about 2 cups, divided in half
  • 2/3 cups shredded Swiss cheese, divided in half
  • salt and pepper to taste

Instructions
 

  • Pre-heat oven to 350°
  • Spray broiler proof baking dish with olive oil spray. Salt and pepper, to taste. Bake chicken breasts for 15 minutes.
  • Turn chicken and pile 1/2 of the onions on each chicken breast.
  • Cover onions with 1/2 of the cheese per breast
  • Bake for another 15 minutes or until chicken is done. Broil the last 3 or 4 minutes or till as browned as you like them.

AIR FRYER INSTRUCTIONS

  • Pre-heat air fryer. Prepare chicken. Add to air fryer. Cook for 10 minutes. Turn chicken over, then pile on onions and cheese. Cook another 10- 15 minutes or till chicken is done and tops are brown and bubbly.
