Meatloaf Muffins are a fun food that can please every member of the family! They will love that they can customize their own toppings.
This is what I call a basic everyday classic meatloaf recipe. There is nothing really special about the base recipe. It is just meat, egg, onion, and spices mixed together, in addition to all the different toppings you can choose.
What kind of pan do I use for these Meatloaf Muffins?
Pampered Chef has a square brownie pan that I just love. I actually got it at a thrift store for a couple of bucks. It is perfect for brownies for sure!! There are a few healthy brownie recipes that my blogger friends have come up with. You can find one HERE.
But you can certainly use a regular round muffin tin, just like my mom used to do. The shape is not particularly crucial to the recipe. The amount of meat that is used per muffin is the important part in this particular case. These muffins are on the “thin” side because I want to leave room on the top of them for the various toppings I like to use for them.
To make them all even and to have the container counts easy. I measure my meat mixture into my Red portion control container. Then I split that amount (3/4 cup) into 3 squares/muffins, so approx 1/4 cup per square/muffin. I can get 9 squares out of 1lb of ground meat and usually stop there for us. Sometimes I fill the other 3 muffins with something else. Cheesy mashed potatoes or a cheesy squash casserole. The recipe for the squash is HERE. I just put the rest of the squash casserole recipe in a casserole dish and bake it at the same time.
What kind of meat can you use for Meatloaf Muffins?
About 90% of the time I use lean ground beef although ground turkey or ground chicken would work too.
Again, a 1 pound package of ground beef gives me just about 3 Red containers although the 3rd one won’t be quite full. One more red container will fill all 12 squares/muffins. The not-quite full Red container doesn’t worry me because I am adding an egg into the mix and that will add a little protein too.
Meatloaf Muffins {21 Day Fix}
Ingredients
Meatloaf
- 1 to 1½ pounds lean ground beef , 1 pound = 9 muffins - 1 ½ pounds = 12 muffins
- 1 large egg
- ¼ cup onion, minced
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper to taste
- olive oil spray
TOPPINGS
- 1 tablespoon ketchup mixed with a little garlic powder- spread across 3 muffins , count 1 sweetener teaspoon for the tablespoon
- 1 tablespoon BBQ sauce- spread across 3 muffins , I count 1 sweetener teaspoon for the tablespoon of my brand
- 3 tablespoons white cheddar cheese, shredded , count 3/5s Blue

Instructions
- Mix all the meatloaf ingredients in a bowl. Squish with your hands till well mixed.
- Measure 1 Red container (¾cup) meat mixture and divide among 3 muffins, approximately ¼ cup per muffin.
- Add any of the toppings you want.
- Bake at 350° for 30 minutes.
- Preheat oven to 350°.

Notes
- Ketchup with garlic powder and black pepper
- 1T ketchup for one sweetener teaspoon and an added teaspoon of brown sugar.
- BBQ sauce. I use Stubb's Original Sauce.
- Any variety of cheese you like.
- Jalapeno slices and cheddar cheese
- Capers and provolone
- Cooked onions
- Mustard and pickles
- Pizza sauce and mozzarella cheese
My 6 holed muffin tin fits into my NuWave Oven so I cook 2 batches of 6 in it. It takes about 20 minutes and I cover them with foil for the 1st 10 minutes and then uncovered them for the last 10 minutes. You might have to adjust the cooking time in yours.
