Brown Sugar Garlic Chicken {Portion Fix/21 Day Fix}

Brown Sugar Garlic Chicken has simple ingredients but is bursting with a sweet and savory flavor sure to please all! It’s just brown sugar, garlic, chicken, and salt n pepper. With a quick roasting to get it all golden and all approved for the 21 Day Fix! 

Is brown sugar approved for the 21 Day Fix?

Yes, it is now. But until the food lists included white sugar… brown sugar was not approved. Why? Brown sugar is just white sugar and molasses mixed together! You get light brown sugar or dark brown sugar depending on how much molasses you add to the white sugar.

Could you use store-bought brown sugar? Yes, you could. But once I tried making my own I knew I would never buy store-bought again, because it tasted so much better!! Another reason I like making my own is that I can make a little at a time. Since we use sugar 1 teaspoon at a time, one cup of it lasts me a long time. It is enough for a couple of recipes or to add to my oatmeal with cinnamon! I like the 1 cup of white sugar + 1 tablespoon of molasses combo because it is most like dark brown sugar. If you use less it will be more like light brown, play with it and find what you like! 

How do you prepare Brown Sugar Garlic Chicken?

I am going to make 2 servings or 2 Red containers worth of chicken today. So I start by mixing the brown sugar and the garlic together. I want to keep this recipe to 1-2 teaspoons of sugar per serving since I am only going to eat 4 teaspoons of sugar in a day total. 

Today I am using 2 teaspoons of sugar per serving. So I just mix 4 teaspoons of the brown sugar with 4 teaspoons of jarred minced garlic. Only use 1 teaspoon of brown sugar and 2 teaspoons of garlic if you want to keep the sweet-spoons count down. You could use garlic cloves but for this, I just use the pre-minced version because I am using so much of it. 

Put the chicken in an olive oil sprayed pan. Pat the mixture onto the chicken and sprinkle with a little salt and cracked pepper.

Cook in a 350-degree oven for 20-25 min or till your chicken juices run clear.  Or you could put it in your air fryer for about 15-20 minutes. Be careful not to get the garlic mix too close to the “element” in your air fryer because it will try to burn and burned garlic tastes bitter. I just put aluminum foil over mine for the last few minutes to keep it from happening.

I spoon the liquid in the pan over the chicken a time or two while it is cooking and after it is done.

Ingredients
  

  • olive oil spray
  • 2-4 teaspoons brown sugar, *see note below
  • 4 teaspoons garlic, minced, jarred is fine
  • 2 medium chicken breasts, skinless
  • salt and pepper

Instructions
 

  • Preheat oven to 350°
  • Mix brown sugar and garlic together.
  • Spray pan. Add chicken breast.
  • Add brown sugar mix to the top of the chicken.
  • Bake for 20-25 minutes or till juices run clear. Spoon juices from the pan over the chicken before serving.

21 Day Fix Container Counts for 1 piece of chicken: 1R, 2 sweet teaspoons

    Notes

    Add 1 Tablespoon molasses to 1 cup of white sugar. Mix well by hand or pulse in a food processor. Store in a baggie or an airtight container.

    What do I serve with Brown Sugar Garlic Chicken?

    Any salad would go with a plate of this chicken! I am making a batch of this broccoli salad. My creamy mayo-based slaw would go great with it too!! 

    Or maybe a big piece of corn on the cob too!
