A Cajun Seafood Boil is one of my favorite meals! It is basically a big one-pot meal that is poured out in the middle of the table to share with family and friends.
Although this is a Cajun version, other parts of the country serve a similar meal. The “Low Country” of the Carolinas, where it is sometimes called “Frogmore Stew”. The “Old Bay” region in Maryland boasts of “steam pots”, which I refer to as a single-serve version of a “boil”. Sometimes people limit the type of seafood they are having in 1 pot and have a “Shrimp Boil” or “Crab Boil”. One of my favorites is a “Crawfish Boil”!!
What ingredients go into this Cajun Seafood Boil?
Small yellow potatoes, crab claws, large shrimp, chicken sausages, and corn on the cob pieces. They all went in the pot today!
Aldi’s has an Andouille flavored chicken sausage that is perfect for this dish. They come in a 4 pack and I wrap them individually so that I can pull out 1 at a time when I want one. Each sausage counts as 1 Red container. I count the number of pieces when I cut them and it is easier to figure your serving size.
This Instant Pot Jambalaya recipe uses them too! Recipe HERE.
One of the most important ingredients is the flavorings you add. I love using Zatarains liquid Crab and Shrimp Boil in my water. Just follow the directions on the bottle for the amount of water and seafood you are using.
I like to dust Old Bay seasoning over the finished product for some extra KICK!
Neither of those 2 products has much sodium in them but seafood is naturally salty so I don’t add very much salt to my water.
How do you cook this as a one-pot meal?
The secret to making this a one-pot meal is to layer in the ingredients.
I start with a large pasta pan. It has a strainer inner liner that I can lift out of the water when everything is done. But you could just use a large pan and then strain the contents like normal.
The whole pot is only going to cook for about 20-25 min. That means the potatoes will go into the pot first because they will take the longest to cook! Adding an ingredient in every 5 minutes cooks everything perfectly.
This is just a 2 serving amount and fits on a platter nicely. But if I was going to make a “10lb” batch I would drain it all and pour it on a table outside that has been covered in newspapers for easy clean-up!

What goes with a Cajun Seafood Boil?
I use 2 Yellow containers of corn and potatoes with 2 Red of seafood and sausages for a big serving. Butter goes great with everything on this plate so I ALWAYS save all of my oil teaspoons for the occasion! I burst the potatoes open before I drizzle it over everything!!
A flavorful Garlic Chive Compound Butter would be great with it for an extra layer of flavor!! Recipe HERE.
Something creamy goes really well with a seafood boil because it helps tamp down the eat of the seasonings. A creamy coleslaw goes just perfect with it!! Recipe HERE.
